I have promised to add recipes and I apologize for the delay.
Delicious Chicken Asparagus, Mushroom, Stir fry served over pasta
Makes 4-6 servings and is quick one pan meal
1lb of chicken cutlet- sliced in small stripes and pieces
1 bunch of thin asparagus(you can substitute can asparagus)
1 Onion-whatever is your favorite
1 package of mushrooms(you can substitute sliced can mushrooms)
2 tablespoon of olive oil or light vegetable oil like canola
Italian dressing or seasoning
Slice chicken into small stripes and put on the side, chop onion or slice in thin stripes, slice mushrooms, cut asparagus on angle into small pieces- I use the entire stalk except the very end. Heat frying pan and oil, add onion, mushrooms and asparagus saute for about 10 minutes or until the onion is starting to soften and caramelize. Slowly add chicken add Italian dressing and simmer for approx 10 minutes.
In a glass bowl add water, salt and small drop of oil, bring to boil in microwave, add pasta-I use Angel Hair or Thin spaghetti,bring to a second boil approx 10 minutes. Strain and rinse. Voilia you have a quick and easy meal.
This can also be done without Chicken or you can substitute Pork, beef it is equally good.

Sounds good for me. Dad doesn’t care for asparagus. How about green beans instead?
